You know one of those foods you just can't live without. Okay mine is tomatoes! Quoting myself from my Random Facts About Me post: Tomatoes...well to say I'm obsessed is an understatement. Since I was a kid, I could literally eat tomatoes every day for breakfast, lunch and dinner! #lovetomatoes. You get the idea, haha.
I have to confess that there was a time in my life that I used to buy tomato salsa from the store. Pre-made and stuffed with all sorts of unhealthy ingredients that I didn't even bother looking at. And then I shifted towards a more natural, wholesome approach to food and this is where the fun began. I haven't looked back since. I only make my own salsa now and I absolutely refuse to buy any from the store, no matter what the ingredients are. Homemade is so much more delicious, natural, healthy and I know every single ingredient that is in it. And it's not time consuming....plan ahead and everything works out. ;) This recipe is perfect for when you're hosting a dinner party, cocktail party or just having friends and family over for casual snacks. It's a favourite at our house!
There are so many amazing health benefits of tomatoes. Here are just a few of the health benefits of eating tomatoes...you know I can't resist sharing these with you:
rich in vitamins and minerals: tomatoes are rich in vitamin c, potassium, dietary fiber which contribute to overall health.
heart health: tomatoes are rich in nutrients such as niacin, folate and vitamin B6 and they have all been associated with the reduction of heart disease risk.
cancer prevention: tomatoes contain a large amount of an antioxidant called lycopene, which gives them their rich red colour. lycopene and other strong antioxidants in tomatoes help lower the risks of certain cancers; especially lung, stomach and prostate cancers.
And now for my quick and easy tomato salsa recipe. If you like spicy foods, definitely choose the spicy option. If your tastebuds aren't feeling brave enough to eat hot peppers, then feel free to skip this ingredient. :) This recipe pairs wonderfully with my Garlicky Guacamole Recipe, so definitely take a peak at that.
Spicy & Sassy Tomato Salsa Recipe
Serves: 4-6 Time: 10 minutes
- 4 large ripe tomatoes, diced
- 1/2 small red onion, chopped
- 3 tablespoons fresh cilantro, chopped
- 2 tablespoons of fresh lime or lemon juice
- 1/2 teaspoon sea salt
- 1/2 teaspoon or more chilli flakes or chopped hot pepper *optional if you choose the spicy option ;)
1. Dice tomatoes into small pieces. Chop onion and cilantro and mix all three ingredients gently.
2. Now add remaining ingredients of lime or lemon juice, sea salt and chilli flakes/hot peppers. Stir all ingredients again.
5. Refrigerate until ready to serve or serve immediately.
