This salad reminds of the summer but you know me, I can't resist a fabulous salad so I will eat this anytime of year. It's so simple, tasty and full of amazing nutrients. I had this for lunch yesterday and it filled me right up and it fit right in with my current spring clean(s)e of a 6-week plant-based diet.
We absolutely love steel cut oats in our house and in fact, sometimes we have them for dinner. There is nothing better than a 'breakfast for dinner' option a few times a month. My girls love 'oatmeal night'...actually that was their dinner last night, as per Lily's request. :)
